For Christmas and New Year&#39;s Day, Daroco revisits the Franco-Italian classics under a festive prism. Traditional cake of rigor in Italy, the panettone diverts way brioche lost - to better surprise its guests. For balance, we add an iced touch with a Fior di Latte scoop. A delight, to reproduce thanks to the recipe below.

For 4 people.

Ingredients :
<div class="s7" style="text-align: justify;">- 1 panettone of 500gr (or half a panettone of 1 kg)</div>
<div class="s7" style="text-align: justify;">- 150 g of butter</div>
<div class="s7" style="text-align: justify;">- 150ml milk</div>
<div class="s7" style="text-align: justify;">- 100 g brown sugar</div>
<div class="s7" style="text-align: justify;">- 20 g of flour</div>
<div class="s7" style="text-align: justify;">- 120 ml of maple syrup</div>
<div class="s7" style="text-align: justify;">- 320 g Fior di latte ice cream (or vanilla ice cream)</div>

Preparation :
Melt 20 g of butter in a saucepan over low heat . Add the flour and cook until golden brown. Add the maple syrup and whisk vigorously to avoid the formation of lumps . Bring to _ boil , and set aside.
Pour the milk into a deep plate. Cut the panettone in 4, pass it in the milk on each side and set aside. Sprinkle both sides with brown sugar.
In a hot skillet , melt a knob of butter. Add the slices of panettone and cook gently on each side until nicely caramelized.
Arrange on plate. Place a nice scoop of fior di latte ice cream on each slice, and top with maple syrup sauce.
