After the Carrot Cake, the sweet potato-based dessert is emerging as the new favorite phenomenon of Foodies!

The North Carolina sweet potatois an iconic ingredient in our Autumn pantry. Seasonal and delicious, it has many advantages. Rich in vitamins A and C , calcium , fibre , potassium and even iron , it is also <a href="https://www.lofficielibiza.com/soul-spirituality/which-is-the-healthiest-diet" target="_blank" rel="noopener">low in calories</a> (with an intake of approximately 103 calories for an average caliber of 114g). To eat it under a new prism, try the sweet version of the cake, which thumbs its nose at the usual <a href="https://www.lofficiel.com/food/le-carrot-cake-d-alix-chambaud" target="_blank" rel="noopener">Carrot Cake</a> .&nbsp;

For a classic cake mould. Preparation: 20 minutes. Cooking: 10 minutes + 1 hour.

Ingredients : • 400 g of North Carolina Sweet Potato puree (Covington) • 250 g of flour • 1⁄2 packet of baking powder • 1 pinch of salt • 1 tbsp. cinnamon • 1 tbsp. nutmeg • 150 g of butter • 180 g of sugar • 4 eggs • 1 tbsp. vanilla extract • 1 tbsp. heaped tablespoon heavy cream • 3 tbsp. tablespoon Kasha (grilled buckwheat)

Preparation :
Peel the North Carolina Sweet Potato then cut it into pieces. Cook for 10 minutes in boiling water until the blade of a knife can be planted there without effort. Puree it and leave to cool.
Mix the sifted flour and baking powder together with all the spices and salt.
In a second bowl, mix the softened butter and sugar evenly. Add the North Carolina Sweet Potato puree, vanilla extract and cr&egrave;me fra&icirc;che. Finally, incorporate the eggs one by one, then little by little, the flour mixture.
Butter the mold and pour the batter. Sprinkle the kasha on top of the cake and bake in a preheated oven at 180&deg;C for one hour. Stick a knife in the center to check for doneness, it should come out with no pastry on the blade.
Leave to cool for 20 minutes and unmold. Serve with vanilla whipped cream for a regressive side.
